It is a warm, summer evening, and you are looking for a great dessert. Try this cold, yummy Summer Freeze Bowl, which is free of dairy (unlike other favorite summer treats)! You might be wondering, why we trying to eliminate dairy from our diet? In Dr. Fuhrman's book Eat to Live, he says this about dairy: "There are many good reasons not to consume dairy. For example, there is a strong association between dairy lactose and ischemic heart disease. There is also a clear association between high-growth-promoting foods such as dairy products and cancer. There is a clear association between milk consumption and bladder, prostate, colorectal, and testicular cancers."

So to avoid these risks, I suggest the below treat. Regardless of your diet, you are sure to love the taste, and the the way you feel, when enjoying this light refreshment. Try our Nice Cream too, for another dairy-free dessert.
- 1/4 of a whole, fresh pineapple (cooled in the refrigerator)
- 1/2 cup organic, frozen blueberries
- 1/2 chopped bananna
- 1/4 cup chopped nuts (optional)
Core and slice a whole, fresh pineapple. (I used a pineapple corer that I bought from Avon. It is an AMAZING tool for almost perfectly cutting up a pineapple. You don't even have to gets your hands sticky.) Place pineapple in a BPA-free Tupperware container and store in the refrigerator. Measure and pour out frozen blueberries into serving bowl. Peel and chop banana. You could also top with walnuts, pecans, raisins, and/or seeds.
This dessert is simple and made of only whole, plant-based foods. You can't eat any better than that!
