Christmas Day might just be the most anticipated day of the year.  Our celebrated traditions stir child-like joy and old memories.  Many of us transitioning to a new, plant-based diet might worry about what will happen to our favorite foods during the holidays.  If so please remember that plant foods are delicious!  Very delicious!  Enjoy the tastes of the holidays with satisfaction and pride by making a few smart subsitutions. 

Here is how the Althouse Family, with lead chef, Janet, made many of the same dishes you have always treasured with plants and simplicity.  Just the good stuff!

We had a Tofurky roast with gravy, potatoes, onions, and carrots.

Tofurky roast is made of non-GMO soybeans and stuffed with wild rice.  Please note that Tofurky contains gluten (which Lacey avoids), a bit of oil, and is a processed food that is found in the freezer section.  Although it is not a perfect food, it is a vegan food and a reminder of a tradition we hold dear.  No animals were harmed in the making of this Furky!  When cooking and sharing with family and friends it is helpful to be adaptable and grateful.  Or compensate elsewhere, as we did with our perfectly whole side dishes.

Instead of cooking the vegetables in oil, Janet used water or vegetable broth.  The result was not taste-less, but tasteful!  Now we can enjoy the wonderful, pure tastes of these delightful veggies.
